Garbanzo and Cabbage Soup

Mmmm… this soup sounds amazing–at least from the ingredients. The name sounds a little old-world England to me. Probably because it has cabbage in it. Somehow that word always brings to mind mid-century English women in charcoal dresses, mussed aprons and white bonnets. I guess I watch too many period films.

- Snow mushrooms
- Bok choy-can’t remember what type… whoops. The awesome thing about bok choy is that it always tastes amazing. The difference between the choys tends to be all about the subtlety or intensity of the flavors.

- Snow peas
- Water…
- Pre-packaged noodles from the 99 Ranch Market. Mine came with flavor packets.
My Yummy Soup Experiment

I recently discovered how delicious the pairing of well seasoned rice and tofu + vegetables blanched in unseasoned water can be. A “duh” notion for many, but a revelation to me. If your rice and tofu are flavorful enough, just adding the hot water your vegetables were cooked in will be enough to create a subtle broth. In my case, it was a welcome subtlety in relation to the intense flavoring of my tofu and rice. You’ll see why in a bit.

You know those nights you find yourself rummaging through your partially filled fridge and cabinets in search of a coherent meal, only to find you’ve got a can of coconut milk, a near empty bag of frozen broccoli, some Chinese cabbage, and bouillon cubes?
