Stuffed Shrooms: There’s a Right Way to Make These, and a Right-er Way

The other night, I flipped through one of my recent veg cook-book purchases, Essential Vegetarian Cookbook, and happened upon a delicious-looking recipe for stuffed mushrooms. While said recipe ends with large mushroom caps, filled to the brim with a beautiful almond-parsley-onion-garlic-mushroom sauce…

Either way, I encourage you to try this recipe. Whether chopped and chunky like mine, or properly processed, you’ll finish with a hearty antipasto, which balances refreshing hits of parsley against grounding rosemary and almond, all of which is tied together with garlic, onion and mushroom stems. I’m posting an interpretation of the recipe below. In all honesty, I more-or-less guess-timated how much of each herb to include in the recipe

Quick and Tasty: My Saturday Morning Brunch

Just before noon last Saturday, I woke up in something of a culinary mood. I wanted something substantive and hearty; most importantly, I wanted something simple. I satisfied my cravings with one of my favorite go-to meals: sautéd mushrooms, gai choy, green onions and rice noodles. I guess that would amount to a stir fry? All told, this meal takes maybe 15 minutes to prep and cook, and it’s delicious.
