You want pasta, but you could go for a taste of the Southwest at the same time? This is the dish for you. This recipe doesn’t call for salt, which I think makes it a little bland. To kick up the flavor, I add a little chili sauce and cheddar cheese.

I must’ve been in some kind of mood, because tonight I made the most criminally delicious, carbohydrate-drenched meal that I have had since making homemade macaroni last month. I call it Spicy Fried Black Beans Over Cheesy Fries, and it is truly as decedent and bad for you as it sounds. The idea came to me while I was sitting at home this afternoon pondering what to make for dinner. I’m trying to be better about my money lately, so when I envisioned the large potato and canned Trader Joe’s Fire Roasted and Diced Canned Tomatoes With Organic Green Chiles in my kitchen–and the little else there was with it– I knew I had to make it work. I ran across to the Ranch 99 Market, snagged a pack of shredded colby and monterey jack cheese and a can of black beans and made magic.

This recipe was inspired by one of my best friends’ recent obsession with veggie burgers. This is a quick and easy black bean burger I came up with after reading maybe two or three different, slightly more complicated recipes. Chickpea salad used to be my quickie go-to meal when I was hungry and broke; I think this burger has taken its place. Sorry there’s not pretty pic to go with this one; I’ll add one the next time I make the burger.
