Hi all, this is Matt from FaveDiets.com. Now that the weather is getting to be a bit cooler, I have a strong urge to be busting out my baking supplies and warming up the oven. I mean, who doesn’t love the smell of delicious baked goods wafting throughout the house. For me, the quintessential baked good is banana bread. My mother would save loads of overripe bananas in our freezer, waiting to defrost them
to make her delicious easy banana bread recipe. Just thinking of her moist banana bread recipe makes me salivate a little bit.
Pani-keke Samoa

Due to popular demand, I’m beginning a series of vegan dessert recipe posts. I have a serious sweet tooth myself, and though I don’t want to become a sugar “enabler” for anybody, there really are a myriad of tasty vegan treats out there. Besides, they’re probably healthier than regular desserts… right?
For the remainder of February, I’ll be posting fruit-based goodies. That doesn’t mean they’ll all be parfaits or fruit tarts; frankly I’m partial to doughey pastries. Today, we start with Pani-keke Samoa.
I haven’t tried Pani-keke Samoa, aka Samoan Pancakes, but they look and sound delish. As you’ll see from the ingredients, they are basically a banana dumpling. I found the recipe below on allrecipes.com , however there’s a slightly simpler recipe for this dish which I also want to try on the AussieMumInTheKitchen blog (with, might I add, a sweet back-story to accompany it).
I’m really excited about banana desserts lately, so this is going to be a great experiment. Equally exciting is the fact that this Samoan dish counts toward my E.A.T. World participation ! Don’t forget to Let me know how it goes when you try it!
